I. preparation of brine
the concentration of brine is 2%. Weigh 8 kilograms of boiled water and 2 kilograms of salt (the concentration can be higher in summer) in the same container and stir until all the salt particles are dissolved. At this time, the concentration of brine is determined by Baume hydrometer. When Baume is 19 degrees, the concentration of brine has reached the requirements.
2. Soaking duck eggs
Qualified fresh eggs will be selected, washed with cold water and dried; Eggs should be washed with boiling water and wiped dry. Then put the dried eggs in the jar neatly. When the eggs are placed at the mouth of the jar 5~6 cm, cover a bamboo grate, and clamp it with several bamboo pieces to ensure that the bamboo grate does not move. Then the prepared salt water with 2% concentration is cooled to 2℃, and then slowly poured into the tank. The poured salt water should completely submerge the duck eggs, and then sealed and stored in the warehouse to make them mature.
Third, the maturity and storage of salted eggs
Duck eggs are soaked in salt water for about 12 days, so the salt content in the eggs should be checked, and they can be eaten after 15 days. Big duck eggs should be soaked for 3~5 days. If you like to eat salty eggs, you should marinate them for about 2 days. Salted eggs soaked in salt water are not suitable for summer processing, let alone long-term storage. This is because if salted eggs are stored for a long time, the eggshell will appear dark spots, the protein will become muddy, the yolk will be black, and it will be seriously rotten and smelly, so it can't be eaten.
Fourth, the nutritional value of duck eggs
1. Duck eggs are rich in nutrients such as protein, fat, calcium, iron and zinc, which can supplement a lot of nutrients to the human body, and are easily digested and absorbed by the human body, which has a certain nourishing effect on the human body.
2. The content of protein in duck eggs is similar to that of eggs, but its mineral content is much higher than that of eggs, so the nutritional value of duck eggs cannot be ignored.
3. Duck eggs are rich in calcium, which can effectively prevent osteoporosis and promote human bone development.
4. Salted eggs contain iron, which has the effect of enriching blood and can treat iron deficiency anemia.
5. Duck eggs can stimulate digestive organs, enhance appetite, neutralize stomach acid, cool down and lower blood pressure.
