Fried tofu, also known as home-cooked tofu, is called Kang tofu in my home. I wonder if that's what other families call it. This dish is easy to cook and very popular in my family, but it is rarely cooked. The main reason is that my mother is impatient and takes time. This dish has enough time for her to fry two dishes, so it is basically cooked by dad while cooking. This dish needs no cooking, and the whole process is especially suitable for beginners, so I learned it at school and it was very successful. If you are a novice in the kitchen, you might as well try this dish.
Ingredients: old tofu 1.
Ingredients: 2 garlic seedlings or 1 onion, 4 cloves of garlic.
Seasoning: edible oil, salt 1 spoon, chicken essence 1 spoon, and water.
Exercise:
1. Wash garlic seedlings and cut them into sections obliquely. If there are no garlic sprouts at home or they are not in season, you can also make them with scallion, peel and slice garlic cloves. Boil the oil first, then stir-fry the garlic slices in the pot.
2. Cut the tofu quickly and clean the prepared tofu. Cut into large pieces 5 cm square and 7 mm thick. High-tech people can cut it in their hands and put it while cutting. If it's inconvenient, cut into pieces on the chopping block first. Spread the tofu neatly in the pot, don't pile it up.
3. Fry one side of tofu until golden brown, then turn it over gently and fry the other side until both sides turn yellow. Remember not to touch the tofu before frying it, or it will break. Just turn it over with a shovel when frying.
4. After the tofu blocks are fried on both sides, pour half a bowl of water into the pot, add some salt and chicken essence to taste and stir well.
5. Turn to high heat. When the water evaporates almost, add chopped garlic seedlings, mix well, sprinkle with oil and take out the pot. Friends who add onions can rest assured that after the onion is heated, the spicy taste can be removed and the fragrance will come out. If the onion is put too early, it will turn black when frying tofu, which is not beautiful. Fried tofu is ready.
Tips:
Try to choose old tofu for tofu, because tender tofu is too tender and fragile.
Try to use a non-stick pan. If you don't use a non-stick pan, put more oil.
Stir-fried tofu must be flat, all tofu can be heated evenly, and you can't flip it casually after frying. If it is not fried well, it will break.
