Practice:
1) Wash mung beans and soak them in clear water for 2 hours. After the mung beans swell, twist off the skin of the mung beans by hand, and leave the bean core inside for later use.
2) The dried tangerine peel is also soaked in clear water to be soft, and the inner white pulp is scraped off with a knife and cut into shreds. After soaking kelp for 1 minutes, wash it, change the knife and cut it into 5cm long filaments.
3) Pour clear water into the pot, and after boiling, pour the mung bean core, dried tangerine peel and kelp into the pot, cover it and cook for about 1 hour with low fire.
4) Finally, add rock sugar and cook for 2 minutes. After natural cooling, put it in the refrigerator for 2 hours and eat it, and the taste is better.
Tips:
1. Kelp mung bean syrup is a very famous sugar water in the south. It can clear away heat and toxic materials, cool serum and lungs, nourish yin and promote fluid production, and also has the functions of reducing swelling and removing blood stasis and removing acne and spots.
2. In summer, due to the sultry weather and high humidity, it is easy to get prickly heat. If prickly heat is accidentally infected, there is still the trouble of getting sore. Therefore, many parents will also boil sugar water with mung beans and kelp to prevent children from getting prickly heat in the cool summer season.
3. This sweet water can be drunk hot in other seasons, and it tastes better after being chilled in hot summer.
4. Kelp and mung bean are both cold foods. People with deficiency-cold constitution and pregnant women should not eat too much, but eating less is ok.
5. if you are afraid of trouble, mung beans can be peeled, but the taste is slightly worse. Don't soak kelp for too long, so as not to dissolve mannitol (with detumescence and diuretic function) on the surface of kelp. Removing the white pulp on the inside of dried tangerine peel is to remove the faint bitterness, so that children can't accept it, and also to make the soup clearer.
6. This syrup is different from mung bean paste. Don't be surprised if it is slightly thin after cooking. In the process of cooking, we should always observe the amount of water in the pot, and make up immediately when there is little water to prevent the pot from being burnt.
