1. Slice the fat sausage, slice the tofu and ginger, and chop the shallots.
2. After the water in the pot is boiled, add tofu and cook for three minutes to remove the beany smell, and then remove it for later use.
3. Blanch the fat sausage with boiling water and remove it for later use.
4. Re-add a proper amount of boiling water to the pot and directly add the cooked tofu, fat sausage and ginger slices.
5. Add salt and a little cooking wine, and put more pepper.
6. Stew for about five or six minutes and turn off the heat. Add chopped green onion or coriander, and finally pour in sesame oil.
