The first step is to prepare materials. The materials needed for frying tofu are tofu, eggs and chives.
Step 2: Stir the eggs. Take out two eggs and beat them in a bowl. Stir them up with chopsticks. Be sure to stir them up in one direction. Otherwise, the eggs will smell fishy and have a lot of bubbles. When stirring the eggs, try to be gentle. Put the eggs aside for later use. You can add a little edible salt to the eggs, which will make them more tasty and delicious.
The third step is to treat tofu. When you buy tofu in the vegetable market, you should pay attention to buying fresh tofu. Generally, you should buy tofu with natural yellow color and sufficient moisture. You can touch the tofu with your hand and find that the tofu will shake slightly, which means that the tofu is better, and the surface of the tofu can't stick to your hands, otherwise it means that the tofu is not fresh for too long.
After buying fresh tofu, take out a big bowl, add a proper amount of water and edible salt into the bowl, stir together, put the tofu into the bowl and soak it in salt water for about ten minutes. The main purpose of soaking the tofu in salt water is to get rid of the beany smell, make the fried tofu more delicious, and also to increase the solidification of the tofu and make it not easy to break. After the tofu is soaked, cut the tofu into thick slices, about two or three centimeters thick.
Step 4: fry tofu. Put the sliced tofu in a bowl filled with egg liquid, so that the surface of tofu can be evenly coated with egg liquid. Fry tofu in a pot, and then fry it in a pot, so that there will be no problem of sticking to the pot. Don't turn the tofu immediately after it is put in the pot, and turn it for a minute or two to avoid it being broken. Sprinkle chives on the surface of tofu, or directly pour it if there is any remaining egg liquid.
