Noodles, a kind of food made from grains or beans by grinding them into powder and adding water to make dough, then either pressing or rolling them into sheets and then cutting or pressing them, or using techniques such as kneading, pulling, pinching and squeezing them to make them into strips (either narrow or wide, or flat or rounded) or small slices, and then finally steaming, boiling, stir-frying, braising and deep-frying them.
Noodles are mostly starch colloids, which absorb water and swell due to their solubility, and are called "pang", which affects their flavor and should be eaten while hot. Noodles are an important part of the Eastern diet, and in the early 3rd century A.D., there were already records of noodles in Chinese books, which were initially called "soup cakes".
