Ingredients
1 Broccoli 300g Beef Tenderloin 2 Cloves Garlic
Seasoning: 1 tablespoon of cooking wine (15ml) 1/2 teaspoon of dark soy sauce (3ml) 1/4 teaspoon of white pepper (1g) 1/4 teaspoon of black pepper (1g) 1 tablespoon of dry cornstarch (15g) 1 tablespoon of Xo Sauce (15g) or the equivalent of oil Consumption Salt 1 1/2 teaspoon (3 grams) water starch 1 tablespoon (15 ml) a few drops of sesame oil
Methods
1) Break broccoli into small pieces and wash. Cut the beef tenderloin into 2mm slices, place in a bowl, season with cooking wine, soy sauce, white pepper, black pepper and dry starch, mix well and marinate for 10 minutes.
2) Heat water in a saucepan over high heat until boiling, then blanch broccoli for 20 seconds, drain and set aside.
3) pour oil in the pan over high heat, when the oil is 70% hot, add the chopped garlic, burst the flavor, add the beef slices stir-fry until browned, add the blanched broccoli, Xo sauce, salt, stir-fry evenly, add a little bit of water, about 10 seconds, drizzle the water starch thickening, drizzle a few drops of sesame oil can be drizzled before leaving the pan.
