1. Cut broccoli into tiny plants, soak them in water for 7-8 minutes and clean them.
2. When the water in the pot boils, add broccoli, oil and salt and cook until tender.
3. Pour the broccoli into ice water to cool. (This is to maintain the bright color of the vegetables)
4. Strain out and drain.
5. Beat the eggs and add salt.
6. Heat oil in a pan to 70% and pour in the egg mixture, fry until it becomes solid and golden brown.
7. Add broccoli and stir fry, add pepper, a little salt and stir fry evenly.
