Manchang chicken should be stewed for about 20 minutes to be rotten.
Put the chicken into a pot of water and bring it to a boil over high heat. Boil the water for about 10 minutes, then use chopsticks to lift the whole chicken out, drain the water from the chicken's chest cavity, and then put it back into the pot to cook for about 10 minutes.
The way to tell if Wenchang chicken is cooked or not is to stick chopsticks into the chicken, if the chopsticks can be easily inserted and pulled out to see that it is not stained with blood, it is ready to eat.
