Quzhou's "Three Heads and One Palm" refers to rabbit head, fish head, duck head and duck palm respectively, which are very special snacks in Quzhou.
Before I went to Quzhou, I had heard that it was very famous for its three heads and one palm, and the first time I went to Quzhou, I tasted Quzhou's fish head, and the flavor was really good. However, as for the rabbit head, I never dared to try it easily because I always thought the fluffy rabbit was so cute that I couldn't bear to eat it.
When I came to Quzhou again, the locals didn't recommend the famous snacks to me, but said a snack called "crystal cake". When I heard the name, I thought it should be a pastry, because I had eaten Longyou hair cake before and thought it should be similar. So, the first night I arrived in Quzhou, I went out with my partner to visit the night market in Quzhou, looking for niche snacks, and feel the night color of Quzhou.
Walking around, but did not see the legendary "crystal cake", back to the hotel when I found a small store called "Xidaozhi", and this place sells crystal cake. After looking around the store, I only saw a freezer, and when I was skeptical, the lady boss pointed to the freezer and said, "Do you want crystal cake?" Ah, crystal cake is a cold drink I heart a hundred question marks. We ordered the original flavor with mint, and the coconut-looking granules were sticky in my mouth. I guess it's because of the glutinous rice content, no wonder it's called crystal - cake!

There are many other specialties in Quzhou, and the Kaihua green snail is one of them. It is a bit like ordinary screws, but smaller, with greenish-colored meat, which is a bit bitter in the mouth, but with a lingering aftertaste.
So, when you come to Quzhou, there are still a lot of delicacies worth savoring in addition to the "three heads and one palm".
