Foreword
A friend gave me a bag of chicken offal and kept it in the refrigerator with no intention of using it for cooking. Rest at home and take care of the mess.
Ingredients
Main ingredients: 300g chicken offal, 300g small green pepper;
Accessory ingredients: appropriate amount of oil, appropriate amount of salt, appropriate amount of ginger, appropriate amount of dried chili pepper, small red tip Appropriate amount of chili, appropriate amount of green onion, appropriate amount of chili noodles, appropriate amount of cooking wine, appropriate amount of Sichuan peppercorns, appropriate amount of light soy sauce, appropriate amount of chicken essence, appropriate amount of garlic
Stir-fried chicken with green pepper

Wash the chicken offal several times, wash it thoroughly, then add a spoonful of salt and an appropriate amount of cooking wine, mix well, and let it sit for an hour.

Cut small green peppers, dry chili peppers, small red peppers, ginger, garlic, and shallots and set aside.

Prepare the chili noodles (I made this myself)

Heat the oil in the pan.

Add Sichuan peppercorns, ginger and garlic and sauté until fragrant.

Pour in chicken giblets.

Pour in the dried chili peppers and small red peppers.

Add appropriate amount of light soy sauce and stir-fry.

Add chili powder.

Pour in small green peppers and stir-fry.

Add appropriate amount of salt and chicken essence and stir-fry.

Pour in the shallots and stir-fry until cooked.
Tips
Chili must be added to chicken offal to suppress the fishy smell.
You can also use pickled peppers.
