Cleaning method of pork belly:
The gastric juice in the pork belly must be cleaned, otherwise it will smell fishy and affect the quality of the soup. I've tried all kinds of methods, and now I'm going to do the simplest and most effective one. It only takes ten minutes, and the pork belly will be completely clean without any peculiar smell.
1, first prepare 4 tablespoons of flour and 4 tablespoons of refined oil, and then clean the outside of the pork belly;
2. Find the hole on one side of the pig's stomach, turn it out completely and put it in warm water to wash away some dirty things;
3. Put flour and oil on the pork belly;
4. Start grasping with both hands. After a few minutes, the sticky things were brought out by the flour, and the flour and oil became more and more slippery. If you feel dirty, you can put the flour back and knead it for about 15 minutes, then rinse it in warm water.
5, boil boiling water in the pot, add rice wine and ginger, put the pork belly in, about a minute or so, the pork belly can be removed immediately as long as it hardens slightly;
6. Finally, scrape off the white thing on the side of the pork belly with a knife.
