Blanch the fish with a spoonful of cooking wine to remove foam, cook for three minutes and then take it out. Chop onion, slice ginger and pat garlic flat.
Add a little salt and ginger to the hot pot to prevent the fish skin from sticking to the pot.
Stir-fry the fish pieces in a pot, add half chopped green onion and minced garlic (I am minced garlic), stir-fry, stir-fry.
