1. Wash the pig's feet and cut into pieces, then put them into a pot of cold water, add a few slices of ginger and blanch them with 2 spoons of cooking wine.
2. Then fish out the pig's trotters and clean them and set aside.
3. Put cooking oil in the pot, add rock sugar, stir fry on low heat until the rock sugar melts into caramel color.
4. Add pig's feet and stir-fry quickly for color.
5. Add green onion, ginger, garlic, sesame leaves, cinnamon and star anise and continue to stir-fry.
6. Add one tablespoon of oyster sauce, 2 tablespoons of soy sauce, 2 tablespoons of dark soy sauce, moderate salt, 2 tablespoons of cooking wine and continue to stir-fry.
7. Add a large bowl of boiling water.
8. Pour the pig's feet into the pressure cooker.
9. Cover the pot with a lid, SAIC and then turn down the heat to simmer for 25 minutes.
