Since we are starting from scratch, let's start with lard!
Refining lard
First, prepare a piece of skinned pork, pork fat or lard (I personally like pork and pork fat, after simmering to make the dregs of oil, fragrant! Crisp! Drooling), a few slices of ginger, a pot.
Cut the pork into slices and the ginger into ginger slices. Turn on the heat, add a bowl of water (a small amount) to the pot, add the pancetta and ginger slices, and pour in a moderate amount of cooking wine. (Ginger and wine are deodorizing effect)
"Skin like condensed fat" in the lard
(My family is usually directly dry pot or oil frying refining oil, add water refining method is my friend with Sichuan to learn the refining method, this method will be more than the refining method of oil refining out of the lard whiter and better looking)
This is the first time that I have ever seen a lard in my life. >High fire, the water will boil, at this time the lard is milky white, the surface of the water flakes of oil. After the water dries up, the grease is slowly forced out, lard gradually become more, turn the fire. When the lard has not increased significantly, the oil residue golden and crispy, lard is simmering well.
The lard noodles
Here's how to make the lard noodles--prepare the following ingredients: boiled lard, noodles (usually wide flat noodles), chopped green onions, chopped chili peppers from Hunan Province, and common household condiments
Mixing lard noodles
Preparing a big bowl (big bowl!), you'll need a large bowl of water, which you'll need for the noodles! Big bowl!) Add two tablespoons of lard, one tablespoon of Hunan chopped chili peppers, a pinch of salt (chopped chili peppers are very salty), add soy sauce (two tablespoons of soy sauce, one tablespoon of dark soy sauce)
Fire - Add water - Boil - Add the powder (you can add a little bit of salt). -Put in the powder (you can add a little salt).
After the powder is cooked, put it into a large bowl, drizzle a little sesame oil (sesame oil), add a little radish strips, shredded papaya or something, sprinkle with green onion, and then start mixing the powder! (You need a big bowl because of the mixing!) After mixing the noodles then add crunchy and fragrant lard crumbs.
