Ingredients: 300 grams of pork belly (cut into approximately 2cm × 2cm × 1cm), 300 grams of potatoes cut into cubes (size is optional for taste), a little onion, ginger and garlic cut into sections, salt, 4 cloves of star anise, 10 or so Sichuan peppercorns, 50 grams of vermicelli, 30 grams of cooking oil, and 500 grams of water.
Method:
1. Wash the pork belly and cut it into pieces, blanch it in a pot with cold water until it is cooked for 5 minutes. When the pork is slightly white, you can take it out without waiting for the water to boil.
2. Add cooking oil to the pot and stir-fry white sugar (brown sugar is also acceptable). If the color is not good, add an appropriate amount of soy sauce, add the blanched meat pieces, add star anise and Sichuan peppercorns and stir-fry together.
3. When the meat is evenly colored, add 500 grams of water (don’t add too much, try to add it all at once), cover the pot and simmer for 10-15 minutes.
4. Add appropriate amount of salt, add potato cubes, and continue to simmer for about 10 minutes.
5. Then add the chopped onions, ginger, garlic and vermicelli, and continue to simmer for 5 minutes before serving.
Second, vermicelli stew
Ingredients: 150 grams of red potato starch or white potato starch. This kind of starch is not easy to break and is delicious. 500g pork belly, 250g baby cabbage, star anise, cinnamon, pepper, dark soy sauce, cooking wine, salt, MSG.
Method:
1. Wash and cut the pork belly into cubes, wash and cut the cabbage into strips, and soak the vermicelli in boiling water until soft.
2. Put the pork belly into the pressure cooker, add star anise, cloves, cinnamon, Sichuan peppercorns, 2 dried chili peppers, a little dark soy sauce, cooking wine and water to cover the meat by about 1 cm, and press for 25 minutes.
3. Add some salt to the cabbage. Heat the oil in the pan and add the cabbage and stir-fry until fragrant. Uncover the pressure cooker and simmer the cabbage and vermicelli until fragrant. (Do not cover the lid.) For a few minutes. That’s it, add MSG to the pot.
