What is the specialty of Korean cake making?

During the autumn and winter seasons, the Korean people often make a small square rice cake (also called "cake"). The most common one is called "glutinous rice cake", which is made from glutinous rice. When the New Year approaches, every household prepares a lot of glutinous rice cakes to give to neighbors, relatives and friends. From this custom came the saying of "eating cakes to celebrate the New Year". Da Gao is indispensable when giving gifts during festivals, especially when giving gifts to parents’ families. It is said that Da Gao also has the meaning of sincerity, love and filial piety.

The cake is made of soaked and steamed glutinous rice, placed on a chopping board and beaten into a cake shape with a mallet, with bean paste filling in the middle and white sugar. It is sweet and delicious.

The method is as follows: making cakes requires four steps: washing, steaming, beating and cutting. First wash the glutinous rice and soak it in water for more than ten hours (if you are in a hurry, you can soak it in warm water for a shorter time) until the rice grains can be crushed with your fingers, then take out the rice and drain the water. Dry. Put the rice into a basket and steam it over high heat for about half an hour until it is soft and hard. Place the steamed glutinous rice on the cutting board and beat it with a mallet while turning. The person who beats the cake should not use too much force at the beginning to avoid the rice grains flying everywhere; the person who turns it should wet his hands with water and keep wiping the cutting board, otherwise, the beaten cake will stick to the cutting board and cannot be turned over. This kind of sticky cake needs to be beaten as evenly as possible. Generally, it is better to beat until no rice grains can be seen. Cut the beaten cake into appropriate small pieces, wrap it with bean paste or cooked bean noodles, and then eat. If you have a sweet tooth, you can dip it in sugar and eat it. Those who like salty food can eat it with salt. This kind of rice cake is more sticky and delicious than ordinary rice cakes, and the taste is particularly fragrant.
