How to make caterpillar bread with cheese sandwich
Tang Zhong: Add 1.5 tbsp of medium-gluten flour and 1/3 cups of water and 1/8 teaspoons of salt, mix them evenly in a small bowl, put them in the microwave oven 15 seconds, take them out and stir them evenly, then take them out and heat them again for about 10 second as appropriate.
Cheese stuffing: 226g cream cheese, 2 yolks, 80g sugar, 4 tablespoons low-gluten flour, 200ml milk, 2 tablespoons butter at room temperature, 2 tablespoons fresh lemon juice (I used 3 tablespoons and half a lemon).
1. First, use a blender to stir the cream cheese at room temperature at high speed (Figure 2), then add the sugar bit by bit (Figure 3), then add the egg yolk (Figure 4), preferably one by one, and finally pour in the low-gluten flour and stir evenly at low speed (Figure 5).
2. Heat the milk with a small pot and torch until it is just about to open (Figure 6), and turn off the fire when there is a circle of bubbles around it (Figure 7). Pour the boiled milk into the freshly stirred cheese paste bit by bit (Figure 8), and keep stirring with a blender. Be careful not to pour in a lot at once, it's easy to wash out the eggs.
3. After all mixing (Figure 9), put it in the microwave for two minutes, take it out and put it back for two minutes after mixing (Figure 10). Everyone's microwave oven is different, so please control your own discretion, not too thin and not as hard as egg yolk. Finally, take it out and mix it with softened butter and lemon juice (figure 1 1). Stir them with a blender until they are very smooth.
It will harden in the refrigerator for about one and a half to two hours. Take it out and divide it into 50 grams each, and knead it into balls. Put it back in the refrigerator and take it out when the bread is wrapped. Mine was a little soft, and it stuck to my hand after I took it out, so I didn't knead it into a ball. I scooped it directly with a spoon when I wrapped it.
Bread practice:? Heavy cream 150g, milk 250g, egg 1 piece, salt 8g, sugar 80g, yeast powder 10g, bread flour 540g and low-gluten flour 60g.
5. Heat the milk in a microwave oven for about 1 min until it is not scalded, then add a spoonful of white sugar (out of the formula) and stir, then add yeast powder, let it stand for 10 min until the surface has foam, then pour it into a blender and add other materials to knead it into smooth and malleable dough (Figure 1). (I used the fourth gear this time, and the film forming speed increased by three times. )
6. Cover the dough with a white cloth and put it in the oven. Turn on the oven light and wait until the dough is twice as big. Pat the exhaust by hand, weigh it as 100g (the dough size in the picture is different because I made other shapes), then roll it round and relax it for 15-20 minutes.
7. Roll the loose dough into an oval shape, and set aside the cheese filling according to 1/3, as shown in the figure. The stuffing can be fuller, making the caterpillar fuller. At the other end, cut the dough into strips with a knife, then roll it up slowly, close the two ends and fold the strip dough under the bread. If it's not long enough, you can pull it.
8. Put the whole shaped bread on the baking tray and put a little oil on it, which makes it easier to demould. Ferment to twice the size again, brush a layer of milk on the surface, decorate your eyes with black sesame seeds, and bake in the oven at 350 degrees Fahrenheit/180 degrees Celsius 18-20 minutes until the surface is golden.
Cooking tips
1, the whole dough is about 1200g, and if it is a caterpillar alone, it can be about12. If you think it is too much, you can choose to reduce the dosage.
2. The stuffing can be changed into other ones according to your own taste. For example, coconut stuffing, bean paste, fluffy meat and so on.
3. Bread body can also be replaced by other sweet bread recipes.
4. The temperature of the first batch of bread was a little high (375F/ 190C). I didn't watch it when I baked it. I baked it for 20 minutes and it was a little burnt. 2. After the third batch, the temperature is adjusted to 350 degrees Fahrenheit/180 degrees Celsius and the baking time is 18-20 minutes. We must observe the last few minutes. Everyone's oven is a little different. Just adjust the baking time yourself.
