1. Ingredients: 1 white eel, appropriate amount of minced black bean sauce, appropriate amount of chopped green onion, appropriate amount of minced garlic, appropriate amount of shredded ginger, appropriate amount of light soy sauce, appropriate amount of peanut oil, appropriate amount of salt, and appropriate amount of red pepper.
2. Cut the eel open, remove the internal organs, and wash away the mucus on the outside. Use a knife to make cuts every 2 centimeters on the back of the eel from beginning to end. Do not cut off and leave some meat connected to the skin.
3. Heat oil in a pot, add minced black bean paste and minced garlic and sauté until fragrant. After turning off the heat, add light soy sauce, salt, and mix into black soy sauce.
4. Arrange the eel in a circle on a plate, pour the mixed black bean sauce onto the eel noodles with a small spoon, and sprinkle with shredded ginger and red pepper.
5. Add enough water to the steamer, put the steaming rack on and bring to a boil over high heat. Place the steaming tray in and steam over high heat for 10 minutes.
6. Take out the steaming plate and sprinkle with chopped green onion.
