5 fresh shrimps
Two green vegetables
Adequate amount of cabbage
One sausage (optional) (it feels better without adding any)
Half a spoonful of salt
A spoonful of oyster sauce
Soy sauce (dark soy sauce) ) Half a spoonful
One spoonful of light soy sauce
Half spoonful of sugar
Half spoonful of chicken essence
Half spoonful of chili oil
Marinate (shrimp)
Two slices of shredded ginger
An appropriate amount of cooking wine
An appropriate amount of white pepper
Shanghai Shrimp Fried Noodles Method
First remove the heads of the prawns and release them, then remove the shells and leave the tails intact. Add rice wine, shredded ginger and white pepper to remove any fishy smell and marinate.
After the water boils, add the noodles and blanch them. Add a little vegetable oil (common practice when making pasta). If you want to add sausage, wait until the water after adding the noodles boils. Wait until the noodles are still a little hard, then take them out (personally, I feel it’s better if you don’t add them~enjoy the simple shrimp fried noodles)
Blanch the noodles and rinse them with cold water from a basket. Then set aside to wait for the water to dry. Try to be as dry as possible.
Take out the shrimp head just now. Pour a little oil into the hot pan and fry the shrimp shells. Press it down to squeeze out the shrimp brains inside. Then discard the shrimp shells and leave the shrimp oil. Fry marinated shrimp in shrimp oil until cooked.
Take out the shrimps, add washed green cabbage leaves and shredded cabbage and stir-fry until soft. Then pour in the fried noodles. Then pour in the seasoning. (It is more convenient for me to put all the seasonings in a bowl in advance. There are chili peppers in the chili oil, similar to the chili peppers mixed with cold noodles.)
Pour in all the ingredients, turn on low heat and use chopsticks first Dip each noodle into the sauce. Then stir-fry over high heat. Pour in the pre-fried shrimps and stir-fry and you’re ready to go!
