Practice:

1, take a large pot and fill it with appropriate amount of water, and wash the whole cold and fresh old hen inside and outside.

2. The part close to the internal organs must be washed clean or it will affect the quality of chicken soup.

3. Put the washed old hen into a large container, use kitchen paper to absorb the water on the surface of the old hen, and then rub the salt on the washed chicken by hand until the salt is fully melted on the chicken skin. Rub the chicken skin only, and don't let the salt touch the chicken.

4. Then put the salted chicken in the refrigerator for 20 minutes (rubbing salt and refrigerating before steaming will make the steamed chicken skin crispy).

5. Rinse the chilled chicken with purified water, remove the head and tip of the chicken, then put the old hen in a casserole, add1250g of clean water and steam for 30min.

6. Then add a proper amount of salt to the pot and steam for another 20 minutes.
