Nutritional analysis of vegetable soup

There are many nutrients in vegetable soup.

On the one hand, vegetable soup does contain many nutrients, because some water-soluble vitamins, minerals and a small amount of bioactive substances in dishes are dissolved in the soup during cooking. For example, when green leafy vegetables are fried, vitamin C, folic acid and vitamin B2 will be partially dissolved, and the oil in vegetable soup will also promote the dissolution of some fat-soluble vitamins such as carotene, lutein and vitamin K. According to the Investigation Report on Nutrition and Health Status of Residents in China issued by the Ministry of Health in 2004, the biggest problem in China residents' dietary structure is excessive fat, and the proportion of fat energy supply in urban residents' diet is as high as 35.0% (38.4% in big cities), far exceeding the reasonable upper limit of 30% recommended by the World Health Organization (WHO). Excessive fat is an important reason for the high incidence of chronic diseases such as obesity, obesity, fatty liver, obesity and cancer. This is especially true of salt. The World Health Organization recommends that we eat 6 grams of salt every day, but the average daily intake of Beijing residents exceeds 13 grams.
