Steps to make stir-fried swimming crabs with ginger and green onions:

Ingredients: 5 swimming crabs, 1 piece of ginger, and 1 small onion.

Accessories: 5 dried red peppers, 1 small bowl of cornstarch, 1 tablespoon of oil, 2 tablespoons of light soy sauce, 1 tablespoon of cooking wine, 1 teaspoon of white sugar, and 1 teaspoon of salt.

Steps:

1. Prepare all ingredients. You must choose fresh swimming crabs, dead crabs cannot be eaten.

2. Put the crab under running water and scrub it clean, especially the part where the crab legs are connected. Use a brush to clean it.

3. Insert a chopstick into the crab's mouth and wait for a few minutes. The swimming crab will not move. Then untie the rubber band, first remove the triangular crab navel on the abdomen, then open the crab shell, remove the crab heart inside the crab shell, and remove the crab gills, crab intestines and crab stomach. These parts are inedible.

4. Cut off the crab claws and flatten them with the back of a knife to facilitate the flavor. Then cut the swimming crab in half in the middle and then cut it into four pieces.

5. Peel the ginger and cut into thin strips, remove the seeds from the dry red pepper and cut into sections, and cut the white and green green onions into sections separately.

6. Coat the cut surface of the swimming crab with starch and apply a thin layer on it.

7. Put a little more oil in the pot than usual for cooking. After the oil is hot, put the starchy side into the pot and fry until it is set.

8. Then turn it over so that the crabs are heated evenly. Fry until golden in color and set aside.

9. Put the crab claws and crab shell into the pot. Place the crab shell with the inside facing up first. Fry the crab roe inside until it solidifies, then turn over and fry until golden brown. Remove from the pot and set aside.

10. Heat oil in a pan, add shredded ginger, dried red pepper and green onions, stir-fry over low heat until fragrant.

11. Put the swimming crab, crab claws and crab shell together into the pot.

12. Add light soy sauce, cooking wine, a little sugar and salt, stir-fry evenly, add a small bowl of water, cover the pot and simmer for five minutes.

13. After the soup has thickened, sprinkle some green onions, then put it into a plate and serve it.

14. The finished product is as follows.
