Cooking, originally a traditional dish in old Beijing, was very demanding at first, and some fresh and tender ingredients must be used in spring. Some people describe this dish as "biting spring radish and crisp pear, eating leeks everywhere", that is, frying spring leeks, vermicelli, fresh mung bean sprouts and tender spinach together to make a "mixed dish". I don't pay much attention to cooking at home, as long as I use some fragrant and refreshing ingredients. If they are all vegetarian dishes, the cost of a plate is only a few dollars. It is nutritious and delicious. If there is meat in the kitchen, you can also cut it into shredded pork and stir-fry it. Not much attention. I'll share a vegetarian dish with you, no meat.

Ingredients: 2 eggs, 3 pairs of mung bean sprouts, leek 1 root, red pepper 1 root, sweet potato vermicelli 1 root, 2 shallots, 4 cloves of garlic, soy sauce 1 tablespoon, half a spoonful of soy sauce, and appropriate amount of salt.

Step 1: Wash the mung bean sprouts and put them in a bowl, break up the two eggs, add salt and stir well, shred the red pepper, wash the leeks, cut them into long sections of about 3cm, cook the vermicelli until there is no white core, then take them out and put them in a bowl, cut the shallots into sections and beat the garlic evenly for later use.

Step 2: Boil the oil in the pot. When the oil is hot, pour the eggs into the pot and fry until the oil temperature is slightly higher. After all the egg liquid is basically solidified, shovel it into large pieces and take it out for later use, so that the fried eggs are more fluffy.

Step 3: Add the right amount of oil to the wok. When the oil temperature is 60% hot, add onion and garlic and stir-fry until fragrant. Add mung bean sprouts and stir-fry for half a minute.

Step 4: Pour in soft vermicelli, add 2 tablespoons of soy sauce and half a spoonful of soy sauce, and stir fry quickly and evenly.

Step 5: Add shredded red pepper and shallot and stir-fry for about 30 seconds.

Step 6: Finally, pour in scrambled eggs, proper amount of salt and monosodium glutamate, stir-fry evenly, take out the pan and put it on a plate, and a plate of stir-fried dishes with good color and fragrance will be completed.

I like eating vermicelli, so I put more vermicelli. Generally speaking, the proportion of ingredients used in cooking is the same, regardless of the main ingredients and auxiliary materials, the spices should be mixed. It's best not to favor one over the other.
