In fact, these two factions have a long history. According to legend, copper hot pot was originally eaten by Manchu banners in Northeast China. They March to fight, usually before the meal is cooked. Later, a general came up with a way to boil water with a helmet, put the meat slices directly into the boiling water, and eat them when they change color. This is the prototype of the northeast copper pot.
Later, when the Manchu entered the customs and established the Qing Dynasty, the food etiquette was naturally improved. As a result, helmets were gloriously laid off, copper pots appeared, and the side dishes and dipping materials of instant-boiled mutton began to be valued. Later, it gradually developed and became the later old Beijing copper hot pot.
