Home-made practice of bean paste
Step 1: First, prepare 500g soybeans, wash them with clear water, cook them in a pot, take them out, and let them cool naturally. Then, wash 250g garlic and 250g ginger and cut them into pieces. The more broken they are, the better. After these ingredients are ready, you can start the next step.
Step 2: Add 150g cooking oil into the pot, and when it is heated to 70%, put the cooked soybeans into the pot, fry the water in the soybeans, then take them out, prepare a bowl, add salt, cooking wine, chopped pepper, minced garlic and Jiang Mo, and stir them evenly with chopsticks.
Step 3: Finally, add a small amount of cooking oil into the pot, pour the mixture of soybeans and peppers into the pot, and slowly cook it with low fire. During the cooking process, keep stirring to avoid burning the pot. Finally, add about 25g of white sugar, stir it until it is completely melted, put it in a container, seal it, expose it to the sun for about 5 days, and then ferment it in the shade for a while.
