How to make braised pork with dried beans
1. Cut the pork belly into small pieces and soak the dried cowpeas in warm water for 2 hours until soft. , rinse with water, cut into small pieces (any length), slice the ginger, and cut the green onion into small pieces
2. Blanch the pork belly in boiling water for 2 minutes, take it out, rinse away the foam with water, and drain the water
3. Pour a little oil into the pot and heat over low heat, add rock sugar and stir-fry until it melts and turns brown or caramel color
4. Pour in the blanched meat , stir-fry until the meat is colored
5. Pour in enough boiling water, light soy sauce, dark soy sauce, green onion slices, ginger slices, aniseed, bring to a boil over high heat, then reduce to low heat and simmer for about 1 hour
p>After 6.1 hours, add the bean segments, stir well, and continue to stew for about 20 minutes. Stir-fry a few times to let the beans take in the flavor. If you feel there is too much soup, reduce the juice over high heat and add an appropriate amount according to taste. Just salt
Cooking Tips
Add enough water to stew the meat, because beans are also added to stew together, so more water is needed to prevent the pot from drying out.
