1975, 6 years later, a large number of rabbits were raised in Yanbei (Lingqiu, Yanggao, Guangling and other counties), and the frozen rabbit meat was purchased by the state and processed and exported. To this end, nine rabbit slaughterhouses and cold storage have been built successively. At that time, the annual output of frozen rabbit meat could reach 1800 tons, and the products sold well in Germany, Britain, the United States, France, Italy, Japan and other countries. The local people said: "There are three rabbits at home, and they don't worry about oil, salt and vinegar; There are ten rabbits at home, with cotton-padded clothes and trousers. "
According to Compendium of Materia Medica, rabbit meat is cold and sweet, which has the effects of nourishing the middle warmer, cooling blood and detoxifying, nourishing the stomach and benefiting the intestines. Modern scientists have proved that rabbit meat is tender, delicious, easy to digest and rich in nutrients, including protein, fat, various amino acids and trace elements. According to medical measurement, the digestibility of Datong frozen rabbit meat can reach 80%~90%, and its high protein and low fat content is 2 1%, which is higher than that of pigs, sheep and beef, while its fat content is only 3.8%, far lower than that of pigs, sheep and beef, and it is not easy to gain weight after eating. Eating rabbit meat for a long time has a good preventive effect on coronary heart disease, fatty liver, arteriosclerosis and other diseases. It is a "three highs and three lows" food, which can prevent modern civilized diseases such as hypertension, obesity and arteriosclerosis.
However, people who start eating rabbit heads don't know this, just to satisfy their own desires.
At that time, after the rabbit meat was exported, the rabbit head was left, which was a pity to be abandoned. The processing factory sells them cheaply to employees and their families. When we go back, we will think about "waste utilization": how to supplement them into the body. So melt the frozen rabbit head, wash it, remove the residual rabbit hair, cut off the eyes, wash away the blood and cook it for adults and children (the picture feels a little unbearable to look straight! ), neighbors can follow. At that time, everything in life was supplied by ticket, meat was people's desire and luxury, rabbit head was cooked with various condiments and could smell the fragrance all over the street. In this way, the rabbit head gradually entered the dining table of Datong people, and some gradually accumulated and sold for 35 cents each. Restaurants and restaurants also pursue profits and launch recipes. Unconsciously, rabbit head has become a famous dish in Datong.
It is said that China has been raising rabbits for more than 2,000 years, and it was domesticated by rabbits introduced from western Europe through the Silk Road. Rabbits don't live in well-built rabbit nests, but like to dig holes. I also raised rabbits in the third grade of primary school. It's really good. Hey. I can dig up wild herbs such as sweet ytterbium and bitter chrysanthemum to feed them, and even pick the leaves of Sophora japonica and elm to feed them. Rabbits are very productive. A female rabbit can give birth to 50 to 60 young rabbits a year. I have a nest of rabbits and raised more than a dozen, but it rained heavily for more than ten days that year, and the rain poured into their holes and almost drowned. -the words are beside the point!
Datong rabbit head is one of the traditional famous dishes that locals love to eat. They stewed rabbit's head with more than ten kinds of spices such as ginger, onion, pepper and star anise (the picture is a bit cruel) for at least three hours, until the flavor of the spices soaked into the soft and rotten rabbit meat, which is a typical northern dish. People who love to eat say it's delicious.
Perhaps it is the cold outside the Great Wall, or perhaps it is the inheritance of the eating habits of the Hu people, Huns, Xianbei and other ethnic groups in history. Most people who live outside Yanmenguan like to eat large pieces of meat, have a special preference for eating meat, and like spicy food. Datong people said that they creatively invented delicious rabbit heads, which were affectionately called "eating rabbit heads" by local people.
At that time, our friends and I bought big ones one by one from the pot stewed by fire on the peddler's bicycle or trolley. I could only eat mutton skewers.
Later, some people said that "rabbit head" is a famous food in Sichuan, and "Datong rabbit head" is an imitation of the past. I even opened a "Sichuan rabbit head shop" in front of my house, but it soon closed down. Although I don't eat "rabbit head", I have always had doubts about "Sichuan" because my mother works in foreign trade and frozen rabbit meat pieces are still common.
Recently, Shuocheng District Cultural Relics Protection Research and Utilization Center of Shuozhou City published "Brief Report on Excavation of the mural tomb of Guandi in Yuan Dynasty in Shuozhou, Shanxi Province" in the first issue of "Cultural Relics" in 2022. The contents are as follows: 20 19 At the beginning of June, the former Shanxi Institute of Archaeology, together with the Shuocheng Culture and Tourism Bureau, investigated the tombs of Guandi Village in Shagenghe Township, Shuocheng District, Shuozhou City (No.M 1).
Guandi's tomb is an octagonal wooden brick tomb with a convex plane, which consists of three parts: entrance, tomb and tomb. The top of the tomb was destroyed and a large amount of eluvial soil was backfilled inside. The tomb wall is made of blue-gray bricks, and the tomb is decorated with murals. Painted with ink and gray directly on the white ash, the thickness of white ash is about 0.4 cm, which is the theme mural and the architectural mural respectively.
The inner wall of the tomb is decorated with colorful paintings, and the side wall near the coffin bed is framed in ink, which is full of freehand brushwork landscapes and has a secluded style. The layout and decorative techniques of this wall are similar to those of Yuan tombs in Datong area. In particular, the setting of the owner's freehand brushwork landscape is similar to that of Feng Daozhen's tomb in the second year of Zhiyuan (1265). The east wall is painted with a "wine preparation map" in ink, and the "porcelain mark" on the side of the square table has an open arc belly and a short flat bottom, showing a typical style of yuan mark. At the same time, there are wine vessels such as Jingping Bottle and Pan Zhan, and the combination with Yuhuchun is similar to the mural tomb of Pucheng (1269) in the Yuan Dynasty, which is a typical "wine preparation combination map" of the Yuan tomb.
Here is a brief introduction to other situations of tombs, mainly murals on the east side: the southeast and southwest walls are service maps. On the southeast wall, there are four waitresses with their hair in a flat bun and serious faces. They wore right-handed narrow-sleeved robes, facing the wine table and heading north. In front, a man leans over, holding Cleisthenes in his hands. After that, all three were heads, one holding a cloth towel and the other holding a bowl with a spoon in it; One person holds a basin with both hands, and a black rabbit head is built in the basin; Finally, a man stood solemnly with a bone flower in his hand.
Note: The waiter with bone flowers is holding a pot with stewed rabbit heads in it. (see photo)
(The archaeological excavation license is Kaozhizi (20 19)No. (63 1)). The person in charge of this excavation project is Ma Sheng, and the participants include Zhang Guanghui, He Zhigang, Wang Chao, Liu Chao, Sun Xiantu, Chen Zeyu and Liang Xiao? )
The murals in this mural tomb should prove that as early as the Yuan Dynasty, residents mixed in Yan Shuo had the custom of "eating rabbit's head with wine"; It can also prove that Datong area is indeed the origin of "rabbit head" food.
