Method for making strawberry cheesecake
1. Wash strawberries and mash them with a cooking machine. Among them, 70g is used for stuffing and 30g is used for cake surface decoration.
2. Heat 70g of strawberry puree, lemon juice, milk and 50g of fine sugar in water. When the temperature is slightly higher than the palm temperature, add the softened gelatin tablets, stir until the gelatin tablets are completely dissolved, and cool to room temperature for later use.
3. Cream cheese is softened at room temperature and beaten until smooth. In the step diagram, I use a cooking machine, and so does the eggbeater.
4. Mix the beaten cheese and the strawberries mixed in the third step evenly.
5. Beat 1 10ML of light cream for five or six times to distribute, that is, light cream stripes appear, and the soft peak cannot stand.
6. Beat the cream and strawberry cheese evenly and make the filling. Cream cheese softens at room temperature and beats until smooth. In the step diagram, I use a cooking machine, and so does the eggbeater.
7. I forgot to go to the next step in a hurry, but the remaining steps are similar to those of Matcha Mousse (please click Matcha Mousse for details), that is, put a large cake in the mold, half with strawberry cheese filling, and then a small piece, and then quickly smooth the remaining strawberry cheese filling. Refrigerate for more than 4 hours and demould.
8. Beat the remaining 40ML whipped cream with 10g sugar until it can be decorated. Mix half of it with the remaining 30g strawberry jam and pour it on the cake surface as a shower. I framed the other half of the cake a little, or I can omit it.
The purchase of strawberries
First, don't buy deformed strawberries. The appearance of normal growing strawberries is heart-shaped, but some strawberries are bright and large in color, with deformed protrusions on the particles, and the middle is sunken after biting. This abnormal berry is often caused by hormone abuse during planting. Eating this fruit in large quantities for a long time may be harmful to human health. Especially pregnant women and children, can't eat deformed berries.
When choosing, try to choose those that are bright, shiny, strong and hard to feel; Avoid buying strawberries that are too big or too watery; It is best to choose strawberries with bright surface and fine fluff as far as possible.
