Practice
(1) 1 small root of bitter gourd, cut in pairs, remove the pith, and cut three small long strips for each half, then cut the bitter gourd into small thin slices finely,
? Boil a little hot water in a small pot, put a little wine and salt each, bring to a boil, then put the bitter melon slices, blanch until browned and pour in a colander,
? Drain the water.
(2) 4 eggs, add the right amount of salt, pepper, wine, beat, add the bitter melon slices, then mix well.
(3) Heat a flat non-stick frying pan, pour 1 tbsp of oil, shake the pan so that the bottom of the pan is covered with a layer of oil, pour in the bitter gourd egg mixture,
? Fry slowly over low heat until the bottom side is solidified, turn over with the help of a spatula and continue to fry the other side, fry both sides until cooked,
? golden brown, pour onto a cooked vegetable sheet, cut small fan-shaped or diamond-shaped pieces with a knife and serve on a plate.
Tips
Bitter gourd needs to be blanched first to make it less bitter
