Tools/materials: Chinese cabbage, pig head, green garlic sprout, green pepper, red pepper, garlic, dried pepper, soy sauce, salt, chicken essence, sugar, balsamic vinegar and cooking wine.
1. Cut pig's head into 2-3cm thin slices, garlic into small particles, green pepper into horse's ears, dried pepper into shreds, green garlic seedlings into sections, and put them on a plate for later use. Cut the cabbage into strips with an oblique knife, but the leaves and stems should be separated.

After the cooking wine is volatilized, add the cabbage stalks and continue to stir-fry over high fire until the cabbage stalks become soft and yellowish.
4. Stir-fry the cabbage, add cabbage leaves and continue to stir-fry, turn the stir-fry leaves, add salt, chicken essence and sugar, and continue to stir-fry evenly. Stir-fry for about 20 seconds, add green garlic seedlings, add a spoonful of pot vinegar at the same time, continue to stir-fry over high heat, 10 second to serve.
Selection method of pig's head meat:
1, look at the appearance: choose pig's head with bright red color, fine texture and uniform meat quality. Avoid dark, wet or smelly parts, which may indicate that the meat is stale or contaminated.
2, smell: smell the pig's head meat, there should be no odor or unpleasant smell. Fresh pig's head meat should have a slight meat smell, not fishy or musty.
