The older the tangerine peel, the harder the skin feels and is easier to break. The surface of good tangerine peel is dry and crisp, and it is easy to break when folded by hand. The complete peel is often cut into 4 petals, each of which is mostly oval and connected together at the fruit stem. Sometimes broken and separated, or in the form of irregularly shaped fragments. The slices are 1 to 2 mm thick and usually curve inward.
