Seasoning: hot and sour juice, fish sauce (or salt), sugar, MSG, lemon juice (or sugar), a little Thai galangal (can be replaced with ginger), 2 coriander roots.
Method: Wash the fish, make two cuts on the fish, boil the water and steam it for 5 minutes, set aside.
