Half a catty of beef, one pineapple, a little salt, a little sugar, a little cooking wine, a little chicken essence and an appropriate amount of oyster sauce.

1. Choose plum head meat (tender) for beef, cut into slices, add a little oil, sugar, ginger powder, starch, pepper and cooking wine, marinate for about 15 minutes, then add a little oil and mix well for later use.
2. Peel a pineapple (you can buy peeled pineapple), remove the hard core in the middle, cut it into pieces half a centimeter thick, cut each piece into small pieces, soak it in light salt water for a few minutes, then take it out and drain it for later use.
3. Heat the wok, add two spoonfuls of oil, pour in the marinated beef, spread it out quickly, add 1 spoon of oyster sauce, stir-fry twice, add pineapple pieces, stir-fry a few times, and evenly take out the pan.

Tip: Don't fry this dish for more than a minute and a half, but do it quickly. It's best to marinate beef once in advance, otherwise the beef will become old, tough and unpalatable if fried for a long time. Don't cook the pineapple for too long, or it will turn sour.
