Wash the dried squid carefully, cut off the squid whiskers with a knife, and then cut off the top of the squid.
Put the dried squid into a basin, and soak the dried squid completely for 20 hours, and change the water every 7 to 8 hours.
Repeat the previous steps until the dried squid is completely soaked, take it out and put it on a plate.
Precautions:
1. If the ambient temperature is high, bubbles may be generated in the water in which dried squid is soaked (normal phenomenon), and the water in the process of soaking is light yellow (also normal phenomenon).
2. In summer, it is recommended to store it in the fresh-keeping room of the refrigerator. The soaking time is about 20 hours, and the water is changed 2-3 times in the middle (or every 7-10 hour). Every time the water is changed, the dried squid can be washed properly, and then soaked in the replaced clean water after washing.
3. Soak in winter 15-20 hours, and change water halfway 1-2 times (or change water every 8- 10 hours). Every time the water is changed, the dried squid can be washed properly, and then soaked in the replaced clean water after washing.
4. After the squid softens, scrape off the black skin, cut it into two pieces, pour the alkaline water and squid into the pot, boil it with high fire, and simmer for two times in a row, and the squid will be bright.
