(1) Braised Silver Carp
Ingredients: silver carp, onion, ginger, garlic, dried pepper, star anise, sweet noodle sauce, cooking wine, salt, sugar and coriander.
Practice: 1, after the fish is cleaned, cut into pieces; Dry the water off the fish; Boil oil in a hot pot, add fish pieces and turn to low heat for frying; Fried on both sides and taken out;
2. Stir-fry onion, ginger, garlic, dried pepper and star anise, pour cooking wine, and put the fried fish pieces into the pot;
3. Add boiling water that has not passed half of the fish, and add the four seas noodle sauce to stew; Turn over once in the middle, add appropriate amount of salt and sugar to continue stewing;
4. When the soup is basically dried, add monosodium glutamate, chopped green onion and coriander.
(2) Garlic silver carp
Ingredients: silver carp, potato starch, onion, ginger and garlic, chicken soup, rock sugar, cooking wine, pepper, soy sauce, vinegar and soy sauce.
Practice: 1, after silver carp is cleaned, marinate it with salt and wine for 20 minutes, wash it, drain it, dry it, throw a thin layer of potato starch on both sides of the oil pan, and take it out.
2, put a bowl of garlic head in the oil pan, fry it yellow, don't scorch it, put fish pieces, fresh and spicy red and green peppers, ginger slices, onion segments, chicken soup, rock sugar, wine, pepper, cover it, and burn it.
3, add soy sauce, vinegar, cook for a few minutes, add a few drops of soy sauce to color, well, plate the fish pieces, thicken the juice, pour it on the fish and sprinkle with chopped green onion.
(3) Stewed silver carp
Ingredients: silver carp, fungus, onion, ginger and garlic, sugar, cooking wine, soy sauce, vinegar and starch.
Practice: 1, clean up the silver carp, and cross the knife on both sides of the fish; Wash the fungus with water;
2. Heat the oil in a hot pot and put the fish in the pot; Fry until both sides are light yellow, and take out; Leave the bottom oil in the pot, stir-fry the onion, shredded ginger and garlic slices, cook the cooking wine and soy sauce, and add water;
3. Immediately put the silver carp, fungus, salt, sugar, vinegar and pepper into the pot and boil;
4, simmer slowly with a small fire until the fish is stewed thoroughly, add monosodium glutamate, remove it and put it on the plate; Thicken the fish with wet starch and pour it on the fish.
(4) silver carp stewed with tofu
Ingredients: silver carp, brine tofu, onion, ginger, garlic, pepper, star anise, cooking wine,
Practice: 1, silver carp washed, cut into large sections after treatment, and obliquely punched with a flower knife; Stir-fry shallots, ginger, garlic and star anise when the oil is hot;
2. Add three spoonfuls of Pixian bean paste and stir-fry red oil; Cook the cooking wine and cut the fish;
3. Add boiled water without fish, boil over high fire, and turn to medium heat for 20 minutes; Add large pieces of brine tofu and continue to stew for 20 minutes on medium heat;
4. Add a small amount of salt and monosodium glutamate and simmer for 20 minutes; Sprinkle coriander and chopped onion, and serve.
(5) Silver carp in tomato sauce
Ingredients: silver carp, tomato sauce, onion, ginger, garlic, cooking wine, sugar, vinegar and starch.
Practice: 1, wash the fish and mark the fish with a "well" shape with a knife; Put salt on it and throw dry flour on it;
2. Fry the fish until golden brown, remove it and put it on the plate;
3. Stir the tomato sauce, vinegar and sugar in the pan, add water starch to thicken and pour it on the fried fish.
(6) Silver carp with bean jelly
Ingredients: silver carp, white bean jelly, onion, ginger, garlic, star anise, cooking wine, sugar, douban hot sauce, starch, beer, broth. Practice: 1, wash silver carp and cut into pieces, mix well with starch for later use, cut white bean jelly into pieces, wash coriander, onion, ginger and garlic and cut into powder;
2, sit in the pan and pour the oil. When the oil is 60% to 70% hot, add the fish pieces and fry them, and remove them when the fish pieces turn golden yellow;
3.
