After Li Shimin acceded to the throne, he couldn't feel any delicacies all day long, and he remembered the noodles made by the Hui mother and son, and thought of their saving his life. So he sent people to visit the Hui mother and son and gave them a generous reward. Sure enough, it paid off and finally found the mother and son. Taizong also ordered chefs to learn from the elderly. Since then, this life-saving noodle-Kirin noodles has been added to the imperial diet spectrum of the Tang Palace.
Later, because the four elephants were extremely rare, it was difficult to find hunters. It was useless for Wu Zetian to kill several tribute envoys, so she had to take a goat instead of the four elephants, and the unicorn face was renamed the back face goat. However, it has been identified by chefs and doctors, and its taste and medicinal value are no less than that of Kirin noodles. Therefore, mutton Huimian Noodles has become a famous court food with a long history.
In the Qing Dynasty, Eight-Nation Alliance went to Beijing, and Empress Dowager Cixi fled to Shanxi for refuge. She also kept in mind the benefits of Hui Mian in nourishing the body and dispelling cold, and sent Li Zhaogong goat to Hui Mian for eating many times, thus timely lifting the cold disease insurance. It was not until the end of the Qing Dynasty that Pang Enfu, the chef of the Manchu-Han banquet, escaped from the palace and lived in seclusion in the south section of the Yellow River because he did not want to be bound by the strict laws of the Imperial Palace. The authentic Yuanyang Huimian Noodles was spread to the people.
