1. Ingredients: 1 eggplant, 3 eggs, appropriate amount of flour, salt, and cooking oil.
2. Mix flour, eggs and water to make a thick and suitable batter, set aside for later use.
3. Wash the long eggplants, cut into round slices about 5 mm thick, sprinkle with a little salt and marinate for a while.
4. Heat an electric baking pan or pan and apply an appropriate amount of cooking oil.
5. Dip the eggplant slices into the batter so that both sides are covered with batter.
6. Put them into the electric baking pan, one by one.
7. Fry one side until golden brown, then flip over and fry the other side.
8. When you find that tiny bubbles begin to appear on the fried side, the eggplant pancake is basically ready.
9. Place the fried eggplant cakes one by one on the plate. When eating, you can pound some mashed garlic, add a little rice vinegar, soy sauce to make a dipping sauce, or use salt and pepper.
