Monascus, also known as monascus rice, is a kind of monascus rice. Monascus purpurea is inoculated on steamed rice of Gramineae japonica rice and fermented to form mycelium. It is a good product for both medicine and food. "Eating Food" in Song Dynasty recorded "red yeast for pickled fish" and "invigorating spleen and warming". In the Ming Dynasty's Compendium of Materia Medica, it was recorded that "Monascus is mainly used to promote digestion and blood circulation, strengthen the spleen and regulate the stomach, treat red and white dysentery, enter the valley, make wine, break blood and kill blood after delivery".
