Okra practice has a small fried okra, okra fried eggs, cold okra and so on.
1, small fried okra
Prepare a number of okra, cut into slices on the diagonal, chili peppers, garlic chopped; into the oil, hot pan, will be cut garlic slices popping incense; into the okra, stir-fry and then add salt, chili peppers. Feel free to stir fry 1-2 minutes, add chicken essence, can be removed from the pot.
2, okra fried eggs with Sriracha
Okra with salt appropriate amount of scrub to remove hair, add water to soak for 10 minutes. Blanch the whole okra in boiling water with a little oil and salt (add oil and salt to keep the plant color green), and fish out of cold water. Cut the blanched okra into small pieces and set aside. Beat the eggs and put a little salt. Heat a wok, add oil and scramble the eggs. Scoop up the eggs and set aside. Stir fry the garlic, add a spoonful of Sriracha and stir fry the okra. Blanch the okra, do not overcook, add the eggs and stir fry. Add a pinch of salt and serve on a plate.
3, cold okra
Wash okra, cut off about 2/3 of the tip. (Do not cut the okra, to prevent blanching soup, inside the mucus loss.) Put mustard, oyster sauce, soy sauce, sugar and sesame oil in a bowl. Mix well. Bring a pot of water to a boil, add 1 tsp salt and corn oil, blanch the okra for about 3 minutes to turn bright green in color, and fish it out. Immediately soak in ice water to cool to keep it crisp green. Plate the okra. Drizzle with sauce and sprinkle with cooked sesame seeds.
How to pick okra
1, gently pinch with your hand, feel not hard, a little tough good. The harder the okra, the harder the seeds inside, too much fleshy fiber, eating completely without the unique flavor and soft texture.
2, the smaller the more tender okra, generally 3-5 days after the flower sheds picking, if the delayed picking coarse fiber increases, it loses its food value. Length 5-10 cm for the best (human middle finger is generally about 8 cm long, can be used as a reference), and then long okra is only suitable for seed or feed.
3, fresh okra has a natural flavor, like the smell of grass when it rains. Older, unfresh okra lacks a clean scent. A fingernail scratch, broken and juicy is the freshest.
4, the color is uniform and bright, green okra is best natural bright green, or with soft yellow. Surface wrinkled or discolored is not fresh. Hair gets old if the color darkens. Okra surface has fine hairs, is a sign of softness, if there are ridges on the fluffy hairs, it means that it is not pressed.
