1. Ingredients: 150 grams of glutinous rice, 50 grams of fresh minced meat, 3 mushrooms, one shallot, a section of carrot, 3 grams of light soy sauce, 100 grams of water, 3-5 grams of salt, corn oil Appropriate amount, 200 grams of all-purpose flour, 1 gram of dry yeast, 10 grams of corn oil, 100 grams of water;
2. Soak the glutinous rice in appropriate amount of water for 2-3 hours, and prepare other ingredients. Clean the mushrooms and remove the stems, peel the carrots and clean the green onions.
3. Dice the carrots and mushrooms, and cut the green onions into minced pieces. Pour an appropriate amount of corn oil into a clean pot, heat the oil over high heat, add diced mushrooms and stir-fry until fragrant, then add minced meat, stir-fry until the minced meat turns white and cooked, add diced carrots and stir-fry evenly.
4. Then pour in the glutinous rice, chopped green onions, salt, light soy sauce, and water, turn to medium heat, and continue to stir-fry. Stir fry until the water is almost gone.
5. Put it on a plate, put it in a pot with cold water, and steam for 30 minutes. Then pour 200 grams of flour, 1 gram of yeast, and 10 grams of corn oil into a clean basin. Add 100 grams of water while stirring with chopsticks. Form into a fluffy shape, then start kneading the dough until smooth, take out the steamed glutinous rice, let cool and set aside.
6. Divide the kneaded dough into 2 parts, sprinkle a little dry powder on the kneading mat, and roll the dough into a thin rectangle. Put half of the glutinous rice on top, pick up the dough on both sides and pinch tightly. Then turn it over, seam side down. Use a bag cutting knife to cut out the lines. Be careful not to scratch it, then use a knife to slowly cut it into appropriate segments, put it in a steamer with oiled paper underneath. Put warm water underneath. Let stand for 40-50 minutes to ferment.
7. After it rises, turn on high heat, wait for 15 minutes after the water boils, then turn off the heat and simmer for 2 minutes, move the pot lid horizontally to open it.
