White tea, a slightly fermented tea, is a special treasure among Chinese teas. It is one of the six major types of tea in China, and is named after its buds, which are covered with white hairs, like silver and snow. White tea is not killed or twisted, only after the sun or fire drying processed tea, with the appearance of buds and hair intact, full of Phi Hao, hair aroma fresh, soup color yellow-green and clear, taste light and sweet quality characteristics.
The main production areas of white tea are Fuding, Zhenghe, Zherong in Fujian, Old Street in Xinzhou, Wuhan, Tianshan in Jiaocheng, Songxi, Jianyang and Jinggu in Yunnan. The basic process includes withering, baking (or drying), picking, re-fire and other processes. Production process
White tea production process is the most natural, the fresh tea leaves are thinly spread on bamboo mats placed in the weak sunlight, or placed in a well-ventilated and light indoor, so as to let it wither naturally. Let it wither naturally. When it is dry to 70% or 80%, then dry it slowly over a gentle fire. Because of the simplicity of the production process, it is processed with the least amount of work.
The single buds used as raw materials are processed according to the white tea processing technology, which is called Silver Needle White Tea. White tea is generally picked from the buds and leaves of Fuding Dahai Tea, Quancheng Red, Quancheng Green, Fuding Dahao Tea, Zhenghe Dahai Tea, and Fu'an Dahai Tea, etc., and processed according to the white tea processing technology to produce white peony or new white tea. The one bud and one or two leaves of vegetable tea are processed as Gongmei.
