1. Ingredients: potatoes, pork, mushrooms, cornmeal (or starch), eggs (or water starch), instant oats (or bread crumbs), salt, soy sauce, white sugar, five-spice powder (or curry powder), ginger, green onions, rice wine (or cooking wine), cooking oil.
2. Chop the pork into minced meat, wash and cut the mushrooms into small pieces, and mince the ginger and green onion. Heat oil in a pan, add pork and stir-fry the water vapor, add rice wine, add shiitake mushrooms and minced ginger and green onion and stir-fry until fragrant. Add appropriate amount of salt, sugar, soy sauce and a small amount of five-spice powder and stir-fry, then add hot water that has not covered the ingredients, bring to a boil and simmer over low heat until the flavors are infused to make the meat sauce.
3. Peel the potatoes, cut into small pieces, steam or dice in microwave.
4. Let the steamed mashed potatoes cool until they are not hot to the touch, put them into a basin, use a rolling pin to press them into mashed potatoes, and then add the meat sauce.
5. Mix the meat sauce and mashed potatoes and taste. If the taste is not enough, you can add seasonings.
6. Arrange the mashed potatoes into the shape of a small round cake, and coat with a layer of cornmeal or starch. Then apply a layer of egg liquid or relatively thick water starch. Finally, add a layer of instant oats or bread crumbs.
7. Preheat the oven to 185° and bake for 10-15 minutes, until the potato cakes are golden brown.
