Chicken wings, fermented bean curd, oyster sauce, green onions, ginger, sugar
Method
1. Cut the front and back of the chicken wings into two diagonally Keep a knife handy for flavoring.
2. Cut the green onions with a diagonal knife and slice the ginger for later use.
3. Crush the bean curd and add a spoonful of bean curd juice and mix thoroughly.
4. Put an appropriate amount of oil in the pot and fry the chicken wings with cold noodles until golden brown.
5. Move the chicken wings to one side of the pot, sauté the onions and ginger until fragrant, and add an appropriate amount of cooking wine to stir-fry the chicken wings.
6. Pour in fermented bean curd juice and stir-fry quickly.
7. Add appropriate amount of oyster sauce.
8. Pour in boiling water that covers the chicken wings.
9. Bring to a boil over high heat and add sugar to taste. Both fermented bean curd and chicken wings are salty, so there is basically no need to add salt. Friends with a heavy mouth can add a little as appropriate.
10. Turn to low heat and simmer for 20 minutes. If the soup is too juicy, turn to high heat to drain it.
