Materials: 500g flour, 500ml water, 10g salt.
1. Mix the flour and salt well, add 400ml water in batches, and patiently mix to form a soft dough.
2. Knead the dough repeatedly in the bowl until the surface is slightly smooth, then take a little from the remaining water and rub it on the surface of the dough and leave it for 10 minutes.
4. While the water is still fresh, make a fist and push the water into the dough until all the water is incorporated and a smooth dough is formed again. Repeat this kicking step at least 3 times to incorporate any remaining water into the dough.
5. Grab a ball of dough a little larger than your fist and shake it forward and to the side repeatedly so that it gradually forms a ball and becomes stronger.
6: Heat a pan over low heat, grab a ball of dough, shake it a few times, and press it into the pan to make a quick round pancake.
7. When the pancake is browned and the edges of the pancake are slightly raised, remove it from the pan and twist the edges with a spatula or your fingers to remove the crust.
