There are many kinds of cuisines in Huai 'an, up to thousands. Yangzhou cuisine only includes cakes such as steamed buns and fried rice with eggs, which is Yangzhou's emphasis: cakes, not food. What other dishes are there in Yangzhou? This shows that Huai 'an Fu cuisine occupies a huge weight and influence in Huaiyang cuisine, far exceeding Yangzhou cuisine.
In fact, history has long been conclusive. Why is it called Huaiyang cuisine? Instead of Yanghuai cuisine?
Huai salt industry is highly developed. Not to mention salt merchants. Without Huai 'an salt, where did the so-called salt merchants come from? Huaian is the main base of national salt production (human edible salt), accounting for half of the country. Huai salt comes out, the world is salty? Even today, Huai 'an's Huai 'an salt accounts for one third of the country's total. What kind of salt merchants are there in Yangzhou today?
Government officials gathered together. During the Ming and Qing Dynasties, the local administrative agencies directly under the central government of the Beijing-Hangzhou Grand Canal, including the Governor of Water Transportation and the Governor of Rivers, were all located in Huai 'an (now a large number of them remain in Huai 'an city). The Governor of Grain Transportation and the yamen officials of the General Department of Grain Transportation are all first-class officials, and they are also the right censors of the Ministry of War or Douchayuan, and they are in charge of the water affairs of Shandong, Henan, Jiangsu, Anhui, Jiangxi, Zhejiang, Hubei and Hunan provinces.
Pay the silver concentration tax. Huai 'an Prefecture has been one of the four major international cities since ancient times, enjoying the same reputation as Suzhou and Hangzhou, and its prosperity is no less than that of any other city. Every year, the silver paid to the imperial court is 654.38+7 million taels, while Yangzhou only pays 9,000 taels, and Yangzhou pays less 1000 taels, which is enough to witness Huai 'an's economic development and prosperity and its influence in the whole country.
Scholars gather. Scholars gathered in Huai 'an Mansion, and Journey to the West was produced in Huai 'an, one of China's four classical novels.
A gathering of civil justice figures. Cao Gang and Yanbang (later moved to green gang, Huabang and Hubang), the largest non-governmental organization in China, are salt transportation and water transportation originating from Huai 'an. There is a reason why Qianlong went to Jiangnan many times.
A large number of senior government agencies and officials have settled in Huai 'an, and salt merchants from all over the country have gone to Huai 'an to buy and sell Huai 'an salt. A large number of scholars, government officials, industrial workers and businessmen gathered, and a huge demand group created the birth and prosperity of Huaiyang cuisine in Huai 'an.
The other Huaiyang Road is in Huai 'an. From 19 14 to 1927, Huai' an (now Huai' an City, Jiangsu Province) was under the jurisdiction of Yangzhou Prefecture and the south-central part of Huai' an Prefecture in the late Qing Dynasty. Huaiyang Road belongs to Jiangsu Province, which governs 13 counties: Jiangdu, Yizheng, Dongtai, Xinghua, Yancheng, Funing, Yangzhou, Huai 'an, Huaiyin, Taizhou, Taixian, Gaoyou and Baoying.
