"Youxian blood duck" is a delicious dish made from Youxian duck. Take the ducklings whose growth period is only about two months, and draw blood well when they are slaughtered. There are also exquisite methods. First put the right amount of water and salt in the bowl, and the amount of salt must be just right. Because of less salt, duck blood is hard to thicken, and more salt is salty and black. The cook cut the duck's neck, hung the duck's feet upside down and let the duck bleed into the bowl. After the duck blood is exhausted, it should be stirred immediately to achieve the blending of water, salt and blood. Chopsticks can stir up the sticky duck blood.
The main feature of fried blood duck is that it depends on duck blood. Plucking duck feathers, cutting internal organs, chopping, taking raw tea oil, and heating in a pot. Slice the duck, add ginger, pepper and cassia twig (powder) into the pot, fry until half done, and add hot water to cook until half done. Then paste the duck blood into it. When you see the duck blood change from bright red to sauce purple, at this time, all the duck blood will be pasted on the duck meat, and the bloody duck can be easily eaten. Youxian blood duck is sweet, fresh and crisp, and it is a good product for drinking or delivering food.
After the reform and opening up, many immortals started businesses all over the country. There are immortals in many big cities such as Shenzhen, Guangzhou, Beijing and Shanghai. Some of them have opened hotels and restaurants in the city, and naturally brought their hometown food to the local area. Hometown dish "Youxian Blood Duck" has now spread all over the country. I once had the honor of being a guest at the home of General Tan Dongsheng in Guangzhou. He specially instructed the chef to cook the dish "Youxian Blood Duck". General Tan said that after decades as a soldier, he has never changed his habit of eating hometown dishes, and the most distinctive one is "You County Blood Duck". In Beijing Hotel and Shanghai Jinjiang Hotel, there is a dish called "Youxian Blood Duck". However, because the duck is not an authentic duck in Youxian County, and the practice is not as authentic as that in my hometown, the taste is far less original than that of the blood duck eaten in Youxian County.
