Ingredients
Sauce stuffing: egg yolk, 2 sugars, 30 grams of milk, 250 grams of low powder, 30 grams.
Puff cake body: 90g of water, 55g of butter, 50g of low-gluten flour, 50g of eggs and 20g of 2 high-gluten flour.

6.? To make puff cakes: cut butter into small pieces, add water and boil over medium heat.
7.? Remove from the fire, add flour and mix well to make a paste.
8.? Cool the batter to 60 degrees, and add the whole egg mixture three times.
9.? Put it in a paper bag and squeeze it onto a baking tray.
10.? Preheat the oven at 200℃ for 3 minutes, bake for 20 minutes, then turn to 180 degrees, and bake for 5 minutes until golden brown.

Tips
1, the temperature of baking puffs should be appropriate, too high will mature early, too low is not conducive to expansion.
2. Don't open the oven cover when baking, otherwise it will affect puffs' expansion. ?
3. I use the PE5386 one-time shuttle oven. Please pay attention to the proper temperature adjustment when using ovens of other brands.
