I'm going to give the names of some of my favorite dishes based on recipes from Wikipedia.
Most people think of vegan recipes as some traditional non-vegan recipes veganized. For example, vegan omelets, vegan donuts, vegan cupcakes, and so on.
However, as an Indian, I'm happy to be a part of a tradition that has traditional vegan recipes, even though no one realizes it.
Here are some of my favorite vegan dishes:
Dosa or Dosai (the D is pronounced th in the)<
A crepe based on Indian rice and lentils, usually served with fresh chutneys and pickles (all sides are also vegetarian).

Masaal Dosai
Sometimes stuffed with potatoes and known as Masala Dosai

Uttappam
Made with the same batter as the dosai made from the same batter, but being a pancake rather than a crepe, it turns into a thick uttappam. Usually, it's filled with onions, chopped tomatoes and other vegetables - kind of like a rice pizza.
Crunchy donuts made from shelled black lentils. These aren't sweet, they're savory, but when served with coconut chutney and chutney, a person can devour half a dozen.
