The method of making noodle soup is as follows:
Prepare half a bowl of flour and half a bowl of water. Mix a little salt into the flour or a little salt in the water. Hold the water container in your left hand. Slowly pour the water into the flour from the bowl. It must be done slowly, as if it is dripping. Use the chopsticks in your right hand to gently spread the flour that has been dripped into the water into large snowflakes. Wash the zucchini and tomatoes and remove the heads and tails. Cut into slices, then cut the slices into strips, and then cut the strips into dices. Soak the black fungus in advance, remove the old roots, and tear it into small pieces. Basically, we soak some black fungus every day at home, so grab a few slices and put them in. Come in, crack two eggs into a bowl, add an appropriate amount of salt, and beat them into a uniform egg liquid. Heat vegetable oil in a pot. Be sure to heat it up. Pour in half of the egg liquid and stir-fry until cooked. If you don’t like scrambled eggs, you can skip this step. Put vegetable oil in the pot. Heat it up. Saute ginger and garlic until fragrant. Pour in Diced tomatoes, stir-fry until soft, add a small bowl of boiling water and bring to a boil. In this way, the tomatoes in the cooked pimple soup will be soft and rotten. If you don't like this taste, you can omit the step of adding water, and then add in the chopped tomatoes. Stir-fry the diced zucchini a few times, then add the black fungus and stir-fry briefly. At this time, you can add seasonings, such as pepper or five-spice powder, according to your favorite taste. Then pour in an appropriate amount of water and put it in after the water boils. Add the mixed gnocchi, cover the pot and bring to a boil. After the pot is boiled, use a spoon to stir the bottom of the pot to avoid sticking. Add salt, then pour in the remaining egg mixture in a circular motion.
It’s ready to be cooked. At this time, you can add a little bit of light soy sauce and vinegar. Not too much vinegar, just a little, otherwise it will be too sour. There are two other things that are absolutely indispensable: sesame oil and nepeta. Just put them in after turning off the heat.
